I'm a big fan of PJ but i wouldn't call him world class. He wasn't even Ireland's no.1.
He won test matches against top tier nations at 10 for Ireland.

I'm no expert but i'd say it could be a) big cup match nerves b) colder day than we've been used to = cold hands lead to knock ons c) for Ulster not much possession so not getting a chance to get into the groove and get timings sorted and the two explanations you gave yourself would cover a lot of it.
