I'm guessing you don't pay much attention to the football championship as a number of teams came through the qualifiers to win the All-Ireland between 2001 and 2010, including five in six seasons. Provincial winners have dominated since then but Mayo have reached the last two finals despite losing in the Connacht championship to Galway.
All-Ireland winners who came through the qualifiers:
2001 Galway (lost in Connacht semi-final against Roscommon)
2005 Tyrone (lost Ulster final against Armagh)
2006 Kerry (lost Munster final against Cork)
2008 Tyrone (lost Ulster quarter-final against Down)
2009 Kerry (lost Munster semi-final against Cork)
2010 Cork (lost Munster semi-final against Kerry)

Rugby has TMO, soccer has VAR, Tennis has Hawkeye, Cricket has Snickometer and HotSpot. GAA seems to have gone for a 1960s home cine format.
